It could take an hour, or three hours, or if it's cold it could be left overnight. Just as long as the dough is twice the size.

So the dough is best room temperature, and left covered by a warm towel. Should the towel be moist? For humidity? [He thinks they'd already discussed something like that in person, but he hadn't been taking notes then and there's a lot to remember!]

[Well, she's happy to supervise. It might even be fun, and there are so many other things that can be baked apart from bread and cakes.]
